Coming soon!!!

I'll keep this one short and sweet... So sorry I have not posted a thing since the last time, but we did head off to NYC for a wonderful and also sickening trip... Ugh! Can't tell you if it was something I ate though, only the Good Lord will ever know what caused my miserable-ness for half the trip... We DID eat good (when I was able to eat) and I got lots of pics coming your way!

Biscotti

I didn't have anything of my own today, so I decided to post a recipe I haven't tried myself yet. It looks delicious and simple enough to make. I might just try it sometime soon, although it seems more of a holiday recipe. Here is the link!

Just one more...

I thought I would throw in this birthday cookie cake courtesy of my work peeps! Too pretty not to share!

Birthday Cake!



Unfortunately, I didn't have time to make my cake BEFORE my birthday, so I made it today... It was supposed to look like a giftbox- Pink wrapping, purple ribbon. I was too lazy to make any other colors for frosting and didn't feel like elaborating anymore. So I just made a box, pretty much! Came out nice, tasted even better. ;o) It looked like a girlified Sweden flag in my opinion though- Next time I think I might play around a litle with fondant icing, I have never done it before but it's looking more and more interesting. I have heard it doesn't taste great, but then again, I have never tried it myself!

Cancun Yummies

I am a little behind on this post, almost a year... So sorry guys! ;o) Here were a few of our favorites from our trip to Cancun last year in May...

A Hawaiian style pizza I had in Isla Mujeres- yummy, but a little different...

Billy had the shrimp and veggies in a pineapple bowl, another delicious dish!

One of our absolute favorites- guacamole with lime dipped in pico de gallo!

Pat O'Brien's had some delicious chicken dishes, mine was the grilled, Billy had the fried "chicken chest".


Our staple down there, chips, salsa, and pico de gallo... Don't forget the lime!

A Late Little Valentine



I figured I would post these because they were delicious and white chocolate cake is great for ANY occasion! I made white chocolate mini cupcakes for my honey on Valentine's day with white chocolate frosting and chocolate covered strawberries. Make and decorate as you like! (These might be cute for Easter, topped with Peeps or grass frosting and Robin's egg candies!)

White Chocolate Cupcakes
1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1/3 cup butter, softened
3/4 cup sugar
2 large eggs
4-oz white chocolate, chopped
1 tsp vanilla extract
1 cup plus 1 tbsp milk (low fat is fine)
Preheat oven to 325F. Line muffin pans with 18 cupcake liners.
In a medium bowl, whisk together flour, baking powder and salt. Set aside.
In a small, microwave-safe bowl, melt the chopped white chocolate by heating it in 30second intervals in the microwave. Stir well with a fork between each interval and cook only until the chocolate is smooth when stirred.
In a large bowl, cream together butter and sugar until light. Beat in eggs one at a time, followed by melted white chocolate and vanilla extract. Working in two or three additions, alternate adding in some of the milk and some of the flour mixture, ending with a final addition of flour. Mix until just incorporated and no streaks of flour remain.
Divide batter evenly into prepared muffin cups.
Bake at 325F for 20-23 minutes until a tester comes out clean and the tops spring back when lightly pressed with a fingertip.
Cool on a wire rack.

For the frosting, you will need one tub of Extra Creamy Cool Whip, half a cup of milk, and one package of Jell-O White Chocolate pudding (use regular, as sugar free will come out grainy). With a hand mixer or regular mixer, beat the cool whip and milk until blended, then sprinkle pudding in little by little. This helps the frosting stay smooth. You may color the icing as needed (like I did for the hearts) and decorate as you wish! Enjoy!

Strawberries, bananas and lime...?


I have to share one of my absolute favorite desserts in the world: One cup of chopped strawberries (or more), half a sliced banana, sprinkled with lime juice (it gives the fruit a yummy tang) topped with Extra Creamy Cool Whip and drizzled with honey. If you are lucky to get a good batch of strawberries, you'll be in heaven...

Pecan Piiiiieee


Hello all! So I decided to start my posts with a pecan pie recipe, I made one a few weeks ago and it was delicious... I also liked the picture I took of it, as I have been inspired by a chef named Heidi Swanson from 101 Cookbooks and her photos always leave me with cravings for whatever she makes! I got the recipe from the Karo Light Corn Syrup bottle, I know anyone can get this as well, but I am posting it nonetheless...

1 cup Karo Light OR Dark Corn Syrup
3 eggs
1 cup sugar
2 tablespoons butter, melted
1 teaspoon Pure Vanilla Extract
1-1/2 cups (6 ounces) pecans
1 (9-inch) unbaked or frozen deep-dish pie crust - I used Pillsbury. For the frozen, make sure to place it on a cookie sheet before placing in the oven!

Mix the first five ingredients together, then mix in pecans. Pour into the crust and voila! You have a pie to bake!
Bake in a 350 oven for 55-60 minutes and cool for 2 hours. This might not be the greatest springtime recipe, but just in case you get a craving... ;o)
